Why we love it: The weather is starting to heat up- lite, refreshing foods are a must for sustaining the hot sun. Seasonal fruits and veggies are some of our favorites, try out these delicious Ends + Stem salads this May!

First, this Greek Chicken Chopped Salad

Baking your own fresh pita chips and tossing the warm chicken with the cold lettuce is the key to the interesting taste in this salad. Packed with veggies and a rainbow of colors, temperatures, and textures makes it bright and healthy and filling.

 This Mango Salad with Chicken + Peanut Vinaigrette is to die for!

This salad is a tropical vacation in a bowl! Mangoes can be challenging to choose, look for heavy for their size pieces that are firm – but also have a little give if you gently press your finger in. A little bit of juice leaking out at the stem end with a fruity smell is also a good sign. If your mango is under ripe you can put it in a brown paper bag for a day or two and it may soften and sweeten up.

Do not miss out on this one, Jerk Fish + Strawberry Salad

We’re serving this for all of our summer get togethers. Jerk marinade might have a long-ish list of ingredients but the instructions are simple: blend. Add a Tablespoon of rum for some real fun and use up any soft herbs you have in the fridge – from basil to cilantro, to parsley or even tarragon. This fish comes alive with jerk but it’s also great on veggies, shrimp, chicken, and pork.

How about this Greek Quinoa Salad + Garbanzo Beans

If you get the chance to go to Greece, you’ll see they serve Greek salad with a huge, incredible slice of feta on top. It’s drizzled with olive oil and the pure white color echoes the buildings around you. It’s awesome. It’s also easy, light and refreshing for summer (which is really the only season you should make it because the quality of ingredients here is everything! You cannot fake it with watery, soulless winter tomatoes.)
