October Roundup – Soups for Sweater Weather

Why we love it: Finally it’s time to break out our fall sweaters! As the weather cools down, warm yourself up with these Ends + Stems’ delicious soups!

First is this quick and easy Miso Soup

Miso is magic. Whisked into stock with a little bit of soy sauce and some green onion and you have a hearty, cozy meal. I add greens to mine to make it a main course rather than an appetizer!

This Turkey Yucatan Soup with Tortilla + Avocado is to die for!

Tortilla soup is all about the garnishes. We love a fairly simple soup base and a bowl chock full of queso fresco cubes, avocado, crispy tortilla strips, peppery radish and cilantro. Since there’s little in the broth, these toppings are what it’s all about!

Don’t miss out of this delicious Black Bean Soup + Avocado Toast

Using canned beans keeps this dish quick and pantry friendly. If you have an Instant Pot or slow cooker, you can sauté the veggies through the tomato paste step and add dried beans (about 2 cups) and the liquid then cook until they’re tender. You’ll get delicious results with the slow cooked bean broth although it does take longer.

Who doesn’t love Broccoli Cheddar Soup? 

This is a great soup to have in your repertoire. It’s fast and hearty and a fantastic use of the broccoli stems. I like to add some florets for the look and texture but be sure to go heavy on the stalks for a velvety smooth texture and to get the most out of your broccoli!

Last but not least this: Turkey Meatball White Bean Soup

When you hear “meatball” soup, it can easily mean hours of work. You have to make both a soup AND meatballs after all. Not in my version. The meatballs are simple and bake in the oven while the soup comes to a simmer and they finish together in the pot. Completely craveable + weeknight ready.
