Turkey Smash Burgers

Why we love it:

My dad has been smashing burger patties into the grill for 40 years. When I went to culinary school, I was really upset about it and it’s been a joke for a long time now that he smashes burgers to bug me. I will publicly state that my dad was ahead of his time and SmashBurgers are now a thing. Though it’s much better to smash in a sauté pan than on the BBQ grill Dad, ok?

Ingredients

  • 114 pounds Ground Turkey
  • 1 Tablespoon Paprika
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 12 teaspoon Kosher Salt
  • 12 teaspoon Unsalted Butter
  • 1 teaspoon Canola Oil
  • 2 Tablespoons Mayonnaise
  • 2 Tablespoons Sriracha
  • 1 Lemon (zest and juice)
  • 4 Burger Buns
  • 1 Avocado
  • 3 Carrots
  • 1 Cucumber

Cooking Instructions

  • 1. TURKEY PATTIES

    In a bowl, add the ground turkey and the spices, including salt. Mash and mix it until it’s uniform. Divide it into 4, 6, or 8 balls. Depending on how many people you’re feeding, either make 1 or 2 balls per person - if you do 2, they’ll be thin and served double on the bun.

  • 2. COOK

    In a large non-stick or cast iron skillet, heat the butter and oil until hot. Add patties, might need to do 2 batches so plan accordingly, and let it sit for about 30 seconds. Wet the back of a spatula with water then press the meat into the pan, smashing it into a round patty and pressing the meat firmly into the pan.

    Cook for about 4 minutes or until browned. Flip and cook the other side. Clean off your spatula and press down on the cooked side to smash the other side. Cook until browned and patties are cooked through - about 3 minutes longer.

  • 3. SAUCE

    Meanwhile, stir together the mayo, sriracha, and zest and juice of the lemon.

  • 4. BUNS

    Toast buns if desired. Spread evenly with sauce and slices of avocado.

  • 5. CRUDITÉ

    Wash and slice carrots and cucumber into sticks. Plate.

  • 6. SERVING

    Serve burgers on the buns (with a handful of chips seems right if you ask me).

Substitutions

  • GLUTEN FREE:
    use GF buns or lettuce wraps, or just eat with a fork and knife
  • PALEO:
    serve over lettuce and you’re good to go
  • TURKEY:
    beef, lamb, chicken
  • MAYONNAISE:
    omit and serve with ketchup if you prefer!
  • CHEESE:
    a very good addition
  • BACON:
    a fantastic addition. For bonus points, sauté it first in the pan, then cook the turkey in the bacon fat instead of butter and oil
  • MUSHROOMS:
    sautéed with or without onions, another incredible addition
  • SRIRACHA:
    omit if you don’t prefer spicy, or use favorite hot sauce
  • KIDS CORNER:
    simplify the spices if needed, specifically the paprika because it turns it red. Serve with cheese and ketchup if that’s their thing
