TikTok’s viral pesto egg recipe is honestly super smart. It’s so easy to fry eggs in pesto and it adds elegance, color, and flavor - we’ll be returning to this technique again! Completing the eggs as a sandwich makes it dinner worthy but you can serve them any way you enjoy your eggs.

Ingredients

  • 4 Tablespoons Unsalted Butter (divided)
  • Crusty Bread (8 slices - or sliced bread to taste)
  • 14 cup Pesto (store bought or homemade)
  • 4 Eggs
  • 14 teaspoon Kosher Salt
  • 14 teaspoon Black Pepper (optional, to taste)
  • 8 ounces Cheddar Cheese (4 slices, or more to taste)
  • 1 Avocado
  • 4 cups Spring Mix Salad Greens
  • 1 pint Cherry Tomatoes
  • 3 Tablespoons Salad Dressing (to taste)
  • 12 pound Ham (optional - omit for vegetarian!)

Cooking Instructions

  • 1. BREAD

    Melt ½ of the butter in a sauté pan over medium high heat and add the bread slices. Press occasionally until deep golden brown, flip. Add more butter if needed. Remove with both sides are toasted.

  • 2. EGGS

    Turn the heat down, if needed and add the pesto. Stir it until it’s a little bubbly; crack in the eggs. Sprinkle tops with a pinch of salt and black pepper to taste. Let them cook without touching them for about 3 minutes until the whites are set. You can then spoon a little of the extra pesto over top to taste. If you like the yolks more set, cover or partially cover the pan. Eggs are done when you like how they look.

  • 3. SANDWICH

    Melt the cheese over the bread in a toaster oven, or leave it unmelted. Top the cheese with hot eggs. Slice and add avocado and the second piece of bread.

    OPTIONAL - If adding ham, add it to the bread with the cheese so it warms up a bit in the oven before adding the egg.

  • 4. SALAD

    Toss lettuce with tomato and salad dressing to taste.

  • 5. SERVING

    Slice sandwich in ½ and serve with salad.

Substitutions

  • GLUTEN FREE:
    use GF bread or serve your eggs without the sandwich part
  • DAIRY FREE:
    fry bread in oil and remove cheese, look for vegan pesto
  • OPTIONS:
    you can scramble the eggs in pesto instead of frying them
  • MEAT:
    try prosciutto or bacon, or even thinly sliced chicken or sausage patties

How to Tweak This Recipe for Kids:

  • Fry the kids eggs first without pesto, or in a separate pan
  • Add sliced veggies and/or fruit to complete the plate
  • Serve lettuce without dressing on it or on the side for dipping

  • Scramble the egg a bit to make it easier to eat
  • Serve some cheese and avocado on the side

For Choosy Eaters

  • Cook eggs the way the kids will most enjoy
  • Deconstruct the sandwich as needed to make it fun to eat
  • If not vegetarian, add bacon or ham or leftover chicken to the pan
