Why we love it:

Put this recipe on heavy summer rotation since it’s super quick and doesn’t require the oven. There are countless ways to have fun with the basic method and add to the filling or assembly if you’re feeling creative - or need to use up some produce drawer finds. It’s also a good candidate for a vegetarian entree for meat lovers.

Ingredients

  • 2 15-ounce cans Green Lentils
  • 1 cup BBQ Sauce
  • 1 teaspoon Unsalted Butter
  • 4 Brioche Hamburger Buns
  • 1 cup Carrot
  • 4 cups Potato Chips (or pretzels)
  • 2 cups Pickles

Cooking Instructions

  • 1. LENTILS

    Open and drain the lentils. Pour in a medium skillet and set over medium heat. Add the BBQ sauce, to taste, and the butter. Stir and add more or less sauce to make it as wet or dry as you like. Depending on the sauce, you may like to add a pinch of salt and pepper.

  • 2. BUNS

    Toast if you like, or if fresh serve them soft.

  • 3. SERVING

    Cut carrots and serve with a side of chips or pretzels. Top buns with a generous mound of saucy lentils. Top with pickles to taste and serve immediately.

Substitutions

  • GLUTEN FREE:
    use a GF bun or toast
  • BUTTER:
    the butter adds a creaminess and makes the BBQ sauce a little richer but you can omit it if you prefer
  • POTATO CHIPS:
    roast frozen fries or make your own, try potato or pasta salad, serve with a fresh green salad, or steamed veggies
  • PICKLES:
    something tangy cuts the BBQ sauce so something like a cabbage cole slaw would be perfect, or try pickled onions or jalapeños for heat
  • BBQ SAUCE:
    use your favorite homemade or prepared sauce, gochujang is delicious, and a Carolina style mustard sauce would be too
  • CAN LENTILS:
    by all means, boil them from dry and mix in the sauce
  • BUNS:
    omit buns and serve over roasted potatoes or with a big green salad
