Meal Plan for the Week of December 11
This week I’m particularly excited about the “rotisserie” style chicken and caesar salad meals. Those grocery store chickens are chock full of additives that aren’t even food, though I certainly understand their convenience. This recipe only calls for a half chicken, but if you double it and make a whole one, the other half saves beautifully all week for sandwiches, another simple dinner, or whatever other recipes you like folding the prepped chicken into. I’m not a huge salad person, but I do love caesar salad and I make a mean, classic dressing If-I-Do-Say-So-Myself. You need a blender to do this the easy way, but I hope you try it out with all of the ingredients listed!
